Whistle Creek Apiaries© is a family owned and operated business established in 1976. Our family farm is located near Whistle Creek, west of Lexington in the scenic Shenandoah Valley of Virginia. We have the proud distinction of being one of the few honey producers in the state to have earned the certification of Virginia's Finest.

Great pride is taken in the fact that all of our honey is raw, natural, unrefined, and unprocessed.  High temperature and pressure filtering techniques practiced by commercial operations removes beneficial enzymes and nutrients from the honey. This also destroys its singularly wonderful flavors.

Because Whistle Creek Apiaries© honey is NOT heated to high temperatures, it may crystalize. Crystallization does NOT affect the purity of honey as it will never spoil. If desired, it can easily be liquefied by placing the container in a pan of warm water (not higher than 120°F or hotter than the hand can bear.) DO NOT OVERHEAT OR MICROWAVE. Refrigeration hastens granulation. Keep in a warm and dry place in a closed container.

The colors and flavors of our honey depend on the seasonal flowers from which the bees gather nectar. It comes in a wide range of colors from crystal white to darkening shades of amber.

Flavors range from mild to full-bodied and are strictly a matter of personal taste preference. We offer the following types of honey seasonally:

â—¦  Thistle - light, smooth, and mellow with a clean finishing sweetness.

â—¦  Clover - a pleasing and familiar taste from the fields of Dutch white clover.

◦  Wildflower - a blend of sources makes this medium in color and taste-a popular elixir for allergy relief.

◦  Tulip Poplar - a dark amber that's rich, robust, and full-bodied, with a distinctive flavor and hue.
